Cajun Shrimp and Rice

This is one of the things that I made last week for the first time and it was really. it is little bit on the spicy side but still delicious so if you are not a big spicy person just ease off on those cayenne peppers. this recipe uses Cajun seasoning which I also made myself so it's recipe is also down there. 
Ingredients for Cajun seasoning:
1/4 cup (50 mL) paprika
1/4 cup (50 mL) dried parsley
2 tbsp (25 mL) garlic powder
2 tbsp (25 mL) dried oregano
2 tbsp (25 mL) dried thyme
1 tsp (5 mL) salt
1/2 tsp (2 mL) cayenne pepper
Mix all these together in a bowl together, you could make this ahead and store at room temperature.


Ingredients for Cajun shrimp and rice (this amount serves 4)
1 tablespoon of unsalted butter 
2 tablespoon of extra virgin olive oil
3 cloves garlic, minced
2 teaspoon of Cajun seasoning
1 pound of large shrimp
4 chopped plum tomatoes
2 chopped scallions
3 cups of cooked white rice
3 tablespoon of chopped fresh parsley
Salt and pepper
Lemon for serving
In a large skillet heat the butter, olive-oil and garlic over medium heat for about 1 minute. 

Add the Cajun seasoning and shrimp, cook it for about 2 minutes or until the shrimp begin to curl. season with salt and pepper.

Add the tomatoes, scallions to the skillet and cook for about 1 minute. 
Add the rice and 1/4 cup water and let them cook with lid on for about 4-5 minutes. 

Stir the parsley on top and serve it with lemon if you like. as I mentioned before this is really good and if you try it I am sure you won't be disappointed.
